I am looking to put some deep dish wheels on my fox, and for the rear it's 17x10.5 and the tires going to be 315/35's out back. How much of a problem will this be trying to make fit??

Use wheel spacers if you have to........ available in multiple sizes.
The tire will fit the rim nicely..Now fitting on the car depends on backspacing and stuff....But you could always use spacers like mentioned above
If your car is lowered, it won't be possible with spacers. You will have to upgrade your control arms and ditch the quad shocks. Most of the available deep dishes won't fit due to the backspacing. Additionally, what body style do you have? Convertables have the least amount of room, followed by the coupes and finally the hatches.
